 There are two methods of processing chicken, the one most commonly used by the big grocery stores is water-chilling, where thousands of chickens are placed in a communal bath of cold chlorinated water where they can absorb up to 23% of that chlorinated water, and are exposed to cross contamination and potentially bacteria like salmonella.

Air-chilling is a process where chickens are hung in individually temperature controlled chambers cooled using purified air eliminating additional water weight and significantly reducing the risks of disease.
